Didn't do too well at all today. I had 10 - 6 for fiber so I guess that's net? 4. Gosh, don't know how to make it 15 when we can only have 3 cups of veggies. Well, anyway, not good.

mickkey, check your lists again. the ones in the book and/or the faq links i left in the first post. what most are doing is dumping the lettuce and having the higher carb count choices on the lists. and remember, you are trying to get to 12 net carbs, not 15.

Jimmie, not getting a good reading either way. I had 1 cup cauliflower, and 2 cups lettuce, and it's showing 4 net carbs in Fitday, and in Atkins Carb counter too. I guess I get an F for today! Yikes.

Hey Jo, thanks for starting this challenge. I just had the best dinner I've had in ages--spaghetti squash topped with tomato florentine sauce, grilled chicken, and mozzarella. Oh, and let's not forget the warm pumpkin with cream cheese, cinnamon and pecans. I am looking forward to what tomorrow brings...

you do realize that you don't have to have lettuce, right?
typically, we think of salad as a bed of lettuce, romaine, endive or other leafy vegetable like that.
perhaps getting rid of 1 cup of the lettuce and having mushrooms and peppers, maybe saute' those with some olive oil.
lets see
1 cup lettuce
1/2 c mushrooms
1/2 green peppers
1/2 c pumpkin
1/2 cup cherry tomatoes
those add up to.... 17 net carbs. well over the 12 needed for the challenge. you can make the net carbs from veggies come down just a bit if you swap out the pumpkin for a full cup of the cherry tomaotes. that gives you the net carb count of 14.

Thanks MG and Jimmie! I see I need to do much more study of these wicked veggies! lol... all of that sounds and looks so good (thanks for posting that photo MG, really helpful) and much better than what I've been eating. Yes, Jimmie I will try that, sounds delicious AND I get more!

Mickey, remember to space them out throughout the day too. They aren't meant to be eaten all at once. I snack on raw veggies throughout the day, and frequently start my day with tuna, mayo, celery and lettuce all mixed together. Sometimes I throw a boiled egg in there. Playing on Fitday makes a big difference.

according to fitday I am at 13net veggie carbs today with: 3 slices of avacado; 2 cups of organic spring mix and 1 cup of spaghetti squash roasted with olive oil and topped with parmasean cheese and becel margerine.
I could eat this everyday! sooooo tasty! I so forgot I could have my fave squash!

Hi Mickkey,
I just wanted to give you an example of what I ate in the way of veg today that gave me 13 net veggie carbs.
I had 2 cups of spring mix at lunch; 3 slices of avacado for a snack; and 1 cup of spahetti squash prepared with olive oil and topped with margerine and parmasean cheese at dinner. According to fit day, this is 13 net carbs.
Don't for get you can have up to half an avacado/day- even a few slices will bring you up. Also, don't underestimate the power of squash (as a main veg) and onion (as a garnish). This challenge will be a great chance to try veg on the list that you may not eat, or haven't eaten in a long time. Also to try new combinations of veg together.
Play around with fitday using the veggies on the acceptable list to see what they list as carb counts.

Ok...dumb question coming up... I sort of know the answer, but just want to be sure: Are legumes considered to be veggies? I was thinking of having peas today...
