  • Re: 14 Day Induction Accountability Thread

Ok - I misunderstood, I thought it was a group thing! Sorry!!!

I'm glad things got straightened out and yes, a potluck is different from ordering personal items in, too easy to grab something that you shouldn't have right now! I think they just hate to see others not participating also especially if they do like you, and you are fun - ya know?
But at this time, making a dinner, dessert etc just so you can eat JUST THAT to participate seems like a bit much to me.

I think they'll understand, besides in a month or so, they'll be coming to you to see how you are doing and how can they!

I can happily report now that someone wisened up. My supervisor said she understands my eating habits and won't make me go anywhere. I had told them I'd come to the potluck for a few minutes (that they decided to do to try to force me to come, after the outing didn't work, with breaded fried chicken, cheesecake, etc. - nothing Atkins friendly) and spend a few minutes but retreat to my desk (they didn't want that because if I did it would have ruined everything and they just weren't going to do the potluck). My boss has now set them straight. Thank goodness!! This has been way more stress than it's worth!

Sherri, let's keep our fingers crossed that they understand. I don't push my food off on them, I don't want them to try to push their food off on me. It's just a matter of respect.

I too like Tracy thought that maybe it was about going out for lunch ( which we all love) and u can always order something on plan in a restaurant, but a potluck is a lil different. And u did offer to come for a few minutes,so why is the whole thing based on u?? They can still do there thing w/o u there right? Is it a really small office that u work in?

Anyways, i proud of u and the fact that your standing your ground and are trully commited to this WOE.

I've made this a few times, without the chocolate, what a great fall pumpkin dessert! I used the almond crust recipe below, again without the chocolate and it was perfect! I think everything is induction friendly, except maybe nuts but those are low in carbs also! You can freeze this by the slice! I haven't done that but know of people who do so that they can portion themselves...

          Tracey

Beachgirl's White Chocolate Marbled Pumpkin Cheesecake

          --------------------------------------------------------------------------------

          White Chocolate Marbled Pumpkin Cheesecake
          24 ounces Cream cheese (3 8-ounce packages)
          1 cup Splenda
          1 teaspoon Vanilla extract
          1 tablespoon Pumpkin Pie Spice
4 Eggs, plus 1 Egg yolk
          3 tablespoons Sour cream
1 Can (15 oz.) of Prepared Pumpkin
3 Squares White Chocolate (baking bar), melted in double boiler

Bring all cold ingredients to room temperature. With an electric mixer, combine the cream cheese and sugar at slow to medium speed, scraping sides often. Add all other ingredients except eggs and pumpkin. When completely mixed (with no lumps), add the eggs and egg yolk, one at a time, beating very slowly. When eggs are incorporated separate out one cup of batter then fold pumpkin into the rest of the batter. When pumpkin is blended, do not mix any more. Over-mixing the eggs is a contributing cause of cracked cheesecakes. (The leading cause of cracking is over-cooking, so don’t believe any one who tells you it is normal for a cheesecake to be cracked; it isn’t.) Always treat the batter gently. To the one cup of separated batter, add the three squares of melted white chocolate and blend.

Add half of the pumpkin batter to a well greased springform pan. Add spoonfuls of the white chocolate batter, and then cover with remaining pumpkin batter. Swirl through with spatula to create marbling effect.

Place the pan on a very large piece of aluminum foil, and fold the foil up around the pan to create a watertight barrier around the cheesecake. Then place the springform pan in an even larger pan and fill the larger pan halfway with water. This is called a water bath. It is a gentler way to cook the cheesecake.

Place the entire water bath containing the cheesecake in a 300-degree preheated oven. Cook for 1 hour and reduce heat to 200 degrees for 1 more hour. Turn oven off and leave cheesecake in until the oven is completely cool. The cheesecake can even be left overnight at this point. Cracks can also occur when a cheesecake cools too quickly, so don’t rush this process. Let it set up for several hours in the fridge, preferably overnight.

Garnish with curls of white chocolate.

If you don't want to add the chocolate, just keep all the batter together and make the entire cake pumpkin, it will work fine that way too.

          ---- - crust
          Chocolate Almond Crust

          2 1/2 cups ground almonds
          2 tablespoons Splenda
          4 tablespoons melted butter
          2 tablespoons unsweetened cocoa powder

I'm happy to report I had the chicken breast salad with ranch on the side.. a piece of bread came with it, tossed to the side! I have to admit that those mashed potatoes that my business vendor had looked yummy but really we were talking so much I hardly noticed after the first glance!

            It was a good test - however - I don't recommend it!

I'm helping to move my folks tomorrow so I'm getting items together for me to take just in case. I'm also goign to make this cheesecake that I added to the link. I've made it and it's very good and with fall - it's a perfect dessert for when you can have one.

Also.....I was watching Discovery Health today and they have a show on there called "I Lost It" which is a weightloss success show. Well there was a lady on there and she followed the Atkins plan and stayed on extended induction for almost a year. She lost 128 pounds!!!! She said it is just so easy for her to follow induction and she has no cravings. I understand what she is saying.....I will definately stay on induction for some time.

Tracey, that recipe sounds delish!! It's making me hungry now. It's almost 5:00 here but I need to stay at work for another 2 hours. I've been here since 8:00 this morning. I've got cases coming from everywhere (why couldn't I have been born rich, win the lottery, or find me a rich generous man).

I am doing better since this morning's fiasco. The woman who totally upset me and initially made me fall off the edge (into brief craziness) apologized. I told her that getting here (motivating myself to start was hard enough) without everyone trying to sabotage me. I had to be strong this morning because Thanksgiving and Christmas are both coming up and these people LIVE to eat. No joke! I had to let them know I was serious or else it would be a battle with every event. I am too tired to go through that.

Speaking of Thanksgiving, what is everyone planning? I think I'll follow Linda's recipes off her website for this time of the year (www.genaw.com/lowcarb). I am really wanting to try the faux potatoes. I think I'll fix turkey, faux potatoes, greens or green beans and some kind of low carb pumpkin dessert. Linda also had a gravy on her site that was induction friendly.

Kassoria (love the name) I think I will try moving to OWL but if for some reason I stall I'll go back to Induction. Some people (on the board) have said they didn't lose much with Induction but lost more once they moved into OWL. However, I still want to remain a part of this thread if everyone else is cool with that.

                    Jenn, do you feel better?

It's the weekend. Be strong WNY Pat!! Amazingly I have to make myself eat on the weekends (even before Atkins). I think my desk job (sitting, sitting, sitting) is what made me want to eat all the time before (not anymore!!).

Ok, since I have a little under 2 hours left...I'd best get back to work!

Keep your fingers crossed for me this weekend. I'm taking my Boy Scouts camping this weekend. I have packed my own food instead of eating what they are eating this weekend. Of course, after looking at their menu I think my food is better. I even changed their dinner tomorrow to be more Atkins friendly.

                        Good luck everybody this weekend.

Hey there! My menu today was BREAKFAST: 2 fried eggs w/ turkey ham steak. LUNCH: 0. DINNER: Broiled cross rib steak w/ sauted mushrooms in butter, steamed fresh squash, salad w/ cuc, tomatoe, olives & ranch. LOTS and LOTS of water. Unfortunately I missed lunch, The day got away from me. My DD and I were out and about selling raffle tickets for her school choir. They're going to Walt Disney recording studios on spring break. I may be going with her. Gives me another incentive to get to goal and in shape. I didn't experience the headache today that I was expecting. I'm happy about that. CATRINIA: You mentioned the holidays coming up and the foods that we'll be preparing. As far as gravy goes, I use arrowroot to thicken up my sauces and gravies. Also, let's not forget the relish tray w/ deviled eggs, fresh vegies and ranch. Another great recipe for this time of year is mock mac & cheese. Made with steamed whole cauliflower head cut up in bite size peices, untill tender. SAUCE: 2 cups heavy cream, 4 oz cream cheese, 1 cup sharp cheddar cheese and 1 tbls. dijon mustard, season w salt & pepper to taste. Heat over medium low heat untill creamy. In baking dish, place cauliflower on bottom of pan and pour sauce over cauliflower. Sprinkle 1 cup sharp cheddar on top and a little paprika for color. Bake uncovered for 20 min at 350 degrees. Let stand for 15 minutes before serving. Great side dish for the holidays or any time and induction friendly. I have more recipes I'll be sharing with all that are interested as we go. Wishing everyone a great evening.

Then for lunuch i had a salad, and ate the pita that it came with. WHY OH WHY didnt i throw it out like i planned. So now i'm hear feeling bad bc i messed up after hoping on the scale this am and seeing 232 (down from 239 on Monday). And i have to go to a bday party this afternoon.

I'm drinking my water as we speak and plan on hoping back on with my next meal and not waiting till tomorrow.
