    hey everyone!! hope you all are doing well. not much going on with me today. i'm finding that linda's recipe site is really amazing. i love the mock danish, and just fixed the jicama "apples" tonight. wow!!!! i almost feel like i'm cheating eatin' them. i think i'm gonna make some and take to my mom's on the 26th, they are having a b-day party for my uncle that day. i'm not even gonna tell them they are not apples until after they all try them.
    i was looking in the low carb conversions forum and found this: (there were some other neat suggestions for substitutions on there as well)
    "Pizza: You can line hamburger on a Pyrex dish, bake in the oven till done, dab off the grease then put your favorite toppings on it. Put back in the oven to heat up and melt cheese. *3 net carbs per serving "
    i am thinking of trying this next.
    before i started back on my atkins journey, hubby and i were having pizza almost every night, trying ones from places we'd never had before. i know he's probably ready for one again, i'm hoping this might curb his craving for the real thing.

    the next thing i'm gonna play around with is some flax. i bought some flax meal this weekend and am gonna try some recipes out. i'm so used to cooking the most basic things the other times i attempted this woe, that i think that's why i got so bored with it. this time i want to try new things and new recipes to keep from letting the boredom set in. as someone once said "variety is the spice of life" and with this lifestyle variety is a necessity. atleast for me it is.

    i too will be starting OWL next week. i needed this one more week on induction to make sure i had my footing, but by next monday i will be ready to start climbing the rungs and adding new things into my "diet".
    it's so hard to believe they actually call this a diet, for me it's more like a little piece of heaven.

    gotta go do my challenge exercises. i let them fall by the way side last night cause we went to the game, but can't falter tonight. i guess last night can be considered my rest day.

      Just a quick check in, hi everyone!!! I just made the picnic salad from Lindas site to go with homemade polishes my bf is bringing in his lunch tomorrow, and some sf/ff jello too. The picnic salad is kind of like potato salad, but with finely chopped cauliflower, its pretty good as a side dish, 10 carbs per cup though, so SIDE is stressed. I think he will like it. BTW!! He has lost 7 pounds his first week! I am so excited for him!! He wasn't going to weigh himself till day 14 but was curious, pretty cool, I think he had a total of 35 to lose.

      I am on one of the bad days of my cold, but I told myself that on day 8 I was going to start walking, well, I did it! I walked 1/2 hour even though I feel like, well you know! LOL So yeah, tomorrow I hope to walk more, but that was my big thing, to add exercise the 2nd week, I am so glad I did!! Days go by so fast, we need to make every one count, or they are gone forever!

      I hope everyone had a good day, I did, WOE-wise, anyway. Ugh, 11 pm, off to bed!

        Bill...LOL...poor dog and cat!! Much more fun to put tape on the bottom of their feet. Big Kudos to you for going to the resturant and for being brave enough to question the waitress. How exciting that her Dad was on Atkins! Bet you will be eating there more often. What a great day!! Love the saying. A wise man!!!

        LOL! No new thread is needed Bill. I will be waiting with baited Atkins breath for you to join us in OWL. We will all be there together as we travel towards our goal..all the rungs are there. It is not going to happen overnight. Come on...5 more carb grams of veggies?? You can do that!! I won't bug you again until your 14 days are up.

        Dinner: BBQ pork steak with a small caesar salad. Tummy still not up to pare.

        I, too, can drink a pot of coffee before bed and still sleep. I think that the decaf thing may be a personal choice...everyone has such different tastes. So you may have to try a few. Or maybe you will just cut way back. Work in progress!

        Tomorrow...No need to feel blue...look at how close you are to meeting some of your challenges...you go girl!

        Monie...jicama is one of the things I want to try. Feel free to copy and paste any recipe you like here. I want to know your flax ones as I am going to get around to making something as well. As long as you give the credit to Linda's site it is okay. I am so glad you are going to go onto the first rung also! But now I will have at least 3 buddies there....you, Val and Bill ;^) !! It will be so nice to have and give support there. And of course....just because some may not be joining us right away doesn't mean that they can drop in to support us until they come over to the light side for good! LOL!

        I am fully hopeful and excited about our next step!

          Hey Val...congrats to BF on 7 pounds lost! That is a great percentage to lose when he only has 35 pounds to lose! The average...everyone is different...is about 10%. Look at you...setting a goal to walk and keeping it even though you are not feeling well. How good is that!!!! Keep going!

            just a quick note before bed. i just wanted to tell you all how great it is to have such wonderful people to share my thoughts and life with as we share our journey to a healthier, THINNER, and happier new us. i hope that we will all be successful and stay supportive to each other for many years to come. i just want to share with you one thing before i turn in for the night. i'm very proud to say i met one of my challenge goals already and we are just barely half way through the month. i met my squats challenge goal!!! also i'm only 200 ab crunches away from that goal. at this rate, i should meet that by the end of the week.

            anyway, just thought i'd share those thoughts.

                Tommorrow--it's true, some people need so much and other's like you have 1 or less a day..raging debates at other threads over this..hope it really doesn't prevent lypolysis tho...and it sounds to me like you need some sunshine! first time it pops out you take a long walk in it! that should do the trick. went to Manitoba on a fishing trip..took an hour by boat to get to the center Island and the lodge..the local indian tribe would take us out for Northern pike, Walleye and Sturgeon then have an awesome shore lunch with our catch..remember it didn't get dark till midnight or so--Everynight I was thinking does the sun ever go down in Manitoba? LOL

                Great Val your beating up your cold any way you can..hope the little one is doing better and WTG with the recipes..Truely can eat from the fat of the land! keep the reviews coming. and you too will be happy come scale day too

                Monie--going to try that pizza! think were all pizza nuts here..have more parlors here than video stores! one every block type of thing.
                for me it's been eggs..trying so many new recipe's for them. Meat has never been a problem as a BBQ nut I have it everywhere..lift up the cushions on my couch and you won't find any loose change, but maybe a bone or 2. I too really enjoy the way we share our life's together! and WTG on the excercise..looking forward to the 22nd..will sign up for my first challenge

                Elsie--you can go anywhere and I'll still be there to cheer you on! and thanks for understanding..it's not the 5 carbs I care about..it's the strick induction rules I want..no thinking..not much counting..no brainer stuff I guess..still thinking it out. Hope you bounce back quickly health wise!

                  haha, no i didnt eat any of that stuff but i do live in england (1hr 30min train journy from london) so i can still get all that stuff in my town. i did eat a wrap, curry and mc donalds. plus other random stuff.

                      Ooooh, I am falling behind and not getting to respond to everyone here, forgive me if I'm not being a good buddy! I am just so busy with school. I am at 87% in the class so far, online anat/phys, tough! Really behind though, so I am going to have to rely on bf to take the kids for a lot of entertaining this weekend... in and amongst my walking, a date night with him to go see Don't Mess With the Zohan (diet coke only for treats at the theater, I know!), and a wedding dance! Oh, and all this food planning, but the way I see it, is that I had to plan for meals before, these ones just take a bit more creativity, and I feel GOOD making them for us! Bf even got involved last night, he was cooking up some venison sausage for breakfast to make it less work in the mornings! I am so stoked about his wt loss, I wasn't sure he would even lose much, with a smaller goal like that. And I didn't really expect him to join me on Atkins either, he just did!

                      Bill had asked what we all had for dinner last night, well, it wa s a flop. I tried so hard to make the crepes into egg noodles, but no matter what temp I cooked them on they were just like fried eggs. They were from Linda's site, maybe I can msg her and ask where I went wrong? Also the shrimp scampi, but it isn't the same without a tomato based sauce. But we had sf/ff jello with homemade whipped cream for dessert! That was yummy! Lemon! LOL! Can't believe how excited I get about jello now!

                      ELsie, I will talk to bf and see if he is ready to move up a rung after next Thrusday (yes the 26th), I don't know if another serving of veg is all that appealing to him right now! LOL! I'll let you know! We kind of planned to stay on induction for the summer, but he may want a little change.

                      Holy cats! It is time to get into an exercise challenge already, isn't it?? I better get over there and figure out what I am gonna do!! Gotta run to Duluth with the kids today, go visit grandma! You all have a good day! (btw, I am 1 pound from my first mini goal!!)

                          Psssstttt....I have secret feelings.....I like it here too. I don't have much to say other than the sun is out again and I'm definitely riding my bike today!

                          We're nearly on the summer solstice (the calendar says tomorrow, but I can't help feeling it's the 21st) then the days start get shorter again. I have this driving need to make the most out of every minute of sunshine that I can. I have a terrible habit of becoming a hermit if I'm not careful and there's been some summers I barely went outside at all. Not this year!

                            Bill...what challenge are you joining?? I understand about the structure of induction. It feels safe there. Just don't get caught in that trap and think that that is safe for your whole journey. One can climb the rungs as slowly as needed as well. And rung one is definately still structured. You continue to eat as you are now but get to have 1 more veggie helping from the accepted list. Also a few more new ones there to try out. There is a list of what they are in the stickies. It just gives you a little more leeway. That being said..with the hospital thing and not bouncing back right away...I unintentionally did an extra week of induction!!! LOL! Dawned on me this morning. Now the down side to this is that I have a garden full of strawberries that I have been picking and putting in the freezer and now it will be another week before I can have some! LOL! Over 2 ice cream buckets so far. Something just doesn't feel right about freezing fresh strawberries so I can eat them in a few weeks...LOL!

                            Anyhow...enough talk of the rungs...everyone needs to do what they think is best for them. We can still support each other regardless!

                            Val...you are doing so good at balancing all the things going on in your life right now. Keep up the great work.

                            I think I will challenge myself to try a new recipe this week. Hmmm...really should try a new one every week or two anyway. Broaden my horizons...LOL!
