hey everyone!! hope you all are doing well. not much going on with me today. i'm finding that linda's recipe site is really amazing. i love the mock danish, and just fixed the jicama "apples" tonight. wow!!!! i almost feel like i'm cheating eatin' them. i think i'm gonna make some and take to my mom's on the 26th, they are having a b-day party for my uncle that day. i'm not even gonna tell them they are not apples until after they all try them.
i was looking in the low carb conversions forum and found this: (there were some other neat suggestions for substitutions on there as well)
"Pizza: You can line hamburger on a Pyrex dish, bake in the oven till done, dab off the grease then put your favorite toppings on it. Put back in the oven to heat up and melt cheese. *3 net carbs per serving "
i am thinking of trying this next.
before i started back on my atkins journey, hubby and i were having pizza almost every night, trying ones from places we'd never had before. i know he's probably ready for one again, i'm hoping this might curb his craving for the real thing.
the next thing i'm gonna play around with is some flax. i bought some flax meal this weekend and am gonna try some recipes out. i'm so used to cooking the most basic things the other times i attempted this woe, that i think that's why i got so bored with it. this time i want to try new things and new recipes to keep from letting the boredom set in. as someone once said "variety is the spice of life" and with this lifestyle variety is a necessity. atleast for me it is.
i too will be starting OWL next week. i needed this one more week on induction to make sure i had my footing, but by next monday i will be ready to start climbing the rungs and adding new things into my "diet".
it's so hard to believe they actually call this a diet, for me it's more like a little piece of heaven.
gotta go do my challenge exercises. i let them fall by the way side last night cause we went to the game, but can't falter tonight. i guess last night can be considered my rest day.

WTG! and Welcome
Ooooh, I am falling behind and not getting to respond to everyone here, forgive me if I'm not being a good buddy! I am just so busy with school. I am at 87% in the class so far, online anat/phys, tough! Really behind though, so I am going to have to rely on bf to take the kids for a lot of entertaining this weekend... in and amongst my walking, a date night with him to go see Don't Mess With the Zohan (diet coke only for treats at the theater, I know!), and a wedding dance! Oh, and all this food planning, but the way I see it, is that I had to plan for meals before, these ones just take a bit more creativity, and I feel GOOD making them for us! Bf even got involved last night, he was cooking up some venison sausage for breakfast to make it less work in the mornings! I am so stoked about his wt loss, I wasn't sure he would even lose much, with a smaller goal like that. And I didn't really expect him to join me on Atkins either, he just did! 
Holy cats! It is time to get into an exercise challenge already, isn't it?? I better get over there and figure out what I am gonna do!! Gotta run to Duluth with the kids today, go visit grandma! You all have a good day! (btw, I am 1 pound from my first mini goal!!)
