    Today, I found chili lime chicken burgers at Trader joes, One carb a burger, that is dinner tonight.

        I'm firing up the grill today. So I'm cooking a bunch of chicken legs (about 16---there was a sale at the supermarket!), a dozen burgers, and mixed veggies: portabello mushrooms, zucchini, eggplant, sweet peppers, onions. I'll be set for the rest of the week

            Okay, I have plenty of grilled chicken and hamburger. I also grilled a couple of steaks. So the protein cooking has been taken care of for the week.

            Tonight, I'm coarsely chopping some of the grilled veggies and tossing them with lemon juice, olive oil and some chopped parsley and thyme for a nice salad to go along with a grilled chicken leg.

              We tried the Italian Zucchini Casserole recipe I found somewhere on this board...hubby & I both loved it. Also tried Georgiana's Sugar-free Ranch Dressing on a salad that sounds a lot like Lisa's moms Topped all that off with some BBQd choriso. Yum - I love this 'diet'

                Julie, I only did the "googling" part when posting that recipe.

                Today I had cinnamon chicken, sauteed chard and mushrooms stuffed with a mixture of feta cheese, sour cream, chopped olives and garlic.

                    i have restarted TODAY and have not gone shopping yet - i did find some chicken, cream cheese, and some salsa and threw in crockpot - so even with mostly non atkins friendly foods in teh house - i found a decent meal.

                    shopping tomorrow! I also burned 479 calories today so I am off to a good start
                    Re re starting this time for good with the support of my husband. He is doing this with me.

                      Butter Chicken / Chicken Makhani

                      Butter Chicken (Murgh Makhani) *Indian
                      Amount Measure Ingredient -- Preparation Method
                      -------- ------------ --------------------------------
                      1 chicken -- (3-lb) skinned,
                      - boned and cut into 8 pieces
                      3 garlic cloves -- mashed
                      1 piece fresh ginger -- size of a walnut -- peeled and finely minced
                      1 lemon -- juice only
                      ***SAUCE***
                      900 gram tomatoes -- seeded and pureed
                      1 stick butter -- (110 g)
                      3 teaspoons lemon juice -- or to taste
                      1 teaspoon ground roasted cumin seeds
                      1/2 teaspoon salt
                      pepper (according to taste)
                      200 ml heavy cream
                      2 green chiles -- (serrano or - jalapeno) -- julienne
                      2 tablespoons chopped cilantro leaves -- for
                      - garnish

                      Marinate the chicken overnight. Pop them in oven for 20-25 mins until cooked, basting with oil / ghee (clarified butter).
                      For sauce, combine all the ingredients together, simmer for 10-15 mins. Pour over chicken and voila!
                      PS - Adjust cooking time according to your oven/gas

                          I had a hamburger patty with Montreal steak seasoning, topped with Boursin, sliced tomatoes on the side, and a non-induction dessert. Yum!

                              Yummmmmmmyyyyyyy with all the recipes.
                              How on earth people say negative things or still say Atkins in boring.

                              I am loving it...Being an Indian, I am for the FIRST time making authentic dishes that require cream & butter & protein...I just removed rice & carbs and voila.

                                Are we really on a diet?

                                Last night I made...

                                Creamy Chicken Tarragon - Pan seared breasts deglazed w/ NSA chicken stock. Added heavy cream, fresh chopped tarragon, salt & pepper. YUM!

                                Roasted Asparagus - Olive oil, salt & pepper, splash of lemon
                                26/F, 5'10





                                Heaviest Weight: 253 lbs

                                Start Date: May 25/2009 @ 241 lbs
                                Induction Complete: 228 lbs 13 lbs. gone buh-bye
                                1st Mini Goal: 220 Lbs.
