    Real Au Jus is beef drippings and water/broth often with celery, carrot & onion simmered together for flavor and then strained. I wonder if many restaurants go through the bother of deglazing the roasting pan and simmering/straining though and instead use a powdered Au Jus mix and that could contain starches/sugars.

    Au Jus would be induction legal if it's the real stuff.

      I made some homemade pork sausages with the help of a family member several months ago. I had some left in the freezer so I've been browned the sausages and have been adding green peppers and red peppers from the garden with onions. The carb eaters will have it over carbs ... I will have it with a salad. It is a rainy day here and I've been smelling the garlic, sausage, peppers and onions as it simmers stovetop for the last few hours.

          Tonight was Catfish Parmesan with pesto cauliflower. Simple to make and different from just plain baked fish and steamed veggies.

            This is one of my Fav Summer Induction Meals & I still eat it during OWL!!!

            Chicken Breast lightly coated with EVOO, Seasoned with Salt & Pepper to taste & Grilled!!!

            Tomatoes(Large Diced), Peppers color of your choice(Large Diced), Mushrooms (Large Diced), Sprinkled with alil EVOO, Salt & Pepper to taste, wrapped in a foil pack with holes poked in it & steamed on the grill while the Chicken is cooking turned several times!!!

            When Chicken is done Grilling cut into bite size pices & serve along with the Veggie Packet over Faux Cauliflower Rice or Spaghetti Sguash topped with shredded Mozzarella or Parmesan Cheese!!! YUMMY

              I think we're going to have beef strips with broccoli and water chestnuts in EVOO and garlic stir fry. YUMMO!

                    Last time I tried cooking calamari, I made a sling shot with the left overs.

                    Seriously, I ended taking mom to IHOP because she loves pancakes. So, I ended up eating the 8 oz sirloin with 3 sunny side up eggs.

                    I'm going to get a little adventurous tomorrow. I'm going to peruse this forum, find a recipe I find interesting and attempt to cook it. Luckily, I checked all my smoke detectors this evening, and they are working fine.

                      Thanks Mizski, great idea. I haven't had catfish in a while.

                        Around here the frozen calamari comes in 5# boxes of whole squid that you have to clean. Cleaning them is easy but 5#s is way too much for me.

                        I get my calamari fresh (actually it's probably just thawed squid from the big box! LOL) so I can just get a 1/2# or 1# if Mr. Ski wants some. My local fish market usually carries it and Asian markets almost always carry it.

                        It really is a wonderful seafood. I usually just cut the bodies up into rings and quickly stir fry/sautee them and the spiders (tentacles). But sometimes I like to stuff the whole bodies with finely chopped veggies. Good stuff but most people are grossed out by the thought of them.

                          I just returned from my monthly journey to an international supermarket in "the big city". It has a fish counter and with all this talk about calamari, I bought huge shrimps, mussels, clams, and baby cuttlefish (which are sort of like calamari). Anyhow, I'm going to boil/steam this seafood in a broth made of water, chopped onion, chopped celery, red pepper flakes and parsley. And I'm going to have it smothered with "snail butter" (what's snail butter? Snail Butter, Recipe for Snail Butter (Flavoured Butters))

                          Veggies tonight will be a chilled snow pea and mint soup and an endive and fennel salad.

                              I had about an ounce of baked Camembert with sun-dried tomatoes and garlic. A "slice" of Atkins Revolution Roll (Megs, I tried the microwave method and they turned out great. Thanks for the tip.) with homemade taramosalata. And a salad with everything I could find in the fridge (lettuce, tomatoes, zucchini, red peppers, olives), served in a big iceberg lettuce leaf with some sour cream and lemon juice.

                                Tonight's dinner was crockpot beef pot roast with a creamy mushroom sauce and mashed cauliflower.

                                Not really pot roast weather but I found the meat in the back of the freezer yesterday and figured I had better use it up. It was delicious.
