    I like it. I used to eat it quite often when I was spending summers at grandma's house. She is cooking it in chicken fat, with caramelized onions, and serves it with salad of whatever veggies she has in the garden. Really good.

    Just make sure you don't overcook the livers (like I did first time I tried cooking some ) or else they'll be pretty yucky imo. They should end up being soft and tender.

      Liver is great (IMO) and with chicken livers you don't have to worry about those tough, chewy parts that you get sometimes with beef or calves liver. And you're right...overcook it and it . And served with caramelized onions...oh my...I'm going to have to have this soon!

      p.s. This liver discussion reminded me that I owe someone a recipe for liver stroganoff back in the Offal thread a couple weeks ago. That's a tasty dish too. Now I have to find the recipe and post it. LOL

                There's been a lot of mention about chicken wings which got me to thinking that I hadn't had real buffalo wings in years. Pre-Atkins, I tried making those substitute dishes that you were supposed to convince yourself tasted just as good. You know the ones: chicken breast tenders, baked with a little hot sauce on it served with LF or worse, FF blue cheese dressing and celery sticks. I'd rather do without!

                So tonight was the real deal: Using the recipe on the bottle of Frank's Hot Sauce, I baked a cookie sheet full of those little wing sections and drumettes at 425 for 1 hour and they got all nice and crispy. Then melted some butter in a big stainless steel bowl and added the hot sauce. Tossed the wings in the bowl and mixed them up. Served them with real blue cheese dressing and celery sticks. It was just heaven!!! Real buffalo wings.

                    Carrot sticks???!!?? I don't even like carrots. What the hello was I thinking about?? Geez, if I'm going to have impure food thoughts you'd think it would be about something better.

                    I hope no one else read that...I'm going to go change it. Thanks for the catch. I really had cut up green celery sticks.

                        I made my first ever batch of Atkins Revolution Rolls this evening! They came out a tad flat but I think its because I got a little carried away folding the egg white into the cheese and broke it down a bit (ignore the date stamp btw, I gotta adjust that)

                          Hey...those Revolution Rolls look great!! I need to try them myself one of these days.

                          Tonight's dinner was a bison cheeseburger with finely chopped jalapenos mixed in to the meat. Served on a bed of sauteed red bell pepper (with a little onion) with a salad on the side.

                            Sunday dinner was cornish hens, buttered cousa squash (tastes like corn), and Meg's Pumpkin Gratin recipe. What a wonderful meal!

                            The pumpkin gratin recipe makes a lot. It says 4 servings but I only had 1/8th of it. Very yummy and a nice autumn-type dish on this cool day. I plan to have some tomorrow for breakfast with a couple chicken breakfast sausage patties.
