    For you eggplant eaters...what the heck does it taste like?? Any tips on picking out a good one or are they all ripe? Do they ripen? I feel myself backing away from the eggplant already! Run bio, run!

        i don't know what to compare the taste to. squash? fried green tomatoes? i suppose for me, it depends on how it's fixed.

            For this challenge I am going to try new vegetables too!
            1) Eggplant
            2) Pumpkin
            3) Turnips (again)
            4) Kohlrabi

              for those on rung 8 or higher don't forget the rutabagas!!!! it makes a tasty faux potato salad.

                Bio - Eggplant is moist and mushy, it kinda takes on any flavor you use (garlic, olive oil). Somewhere I have a recipe for a dip, I'll see if I can find it.

                Joy, absolutely don't forget the Rutabagas! I peel, cube, toss in oil and roast like you would a 'tato. They are sooooooo good. Kinda turnip like, but not. I only use pumpkin as a treat/dessert, but it's similiar to Butternut Squash (a good carb bumper upper).

                What do we do with the Kohlrabi?

                Also, Julirama turned me on to Daikon Radish. VERY tasty, I've had it like 4 times now!

                    Except for the leather skin (not sure if I did something wrong), the eggplant was good. I keep expecting something bitter like cooked rutabaga (ack!) but it wasn't at all. It's soft so it cooked quickly.

                    I keep forgetting that I love raw rutabaga (handy-dandy Gram Counter helps with the spelling!) so I should have gotten some of that, after all.

                      My friend's husband is practically a GOAR-MAY chef. I'll write and ask her if they do anything with kohlrabi...

                      Is butternut squash ok for exdented iinduction, even if it's not on the list? Maybe reduce the serving to 1/4 cup? It looks like it's got good fiber that I want...

                        tmn - Rutabaga bitter? I've only had really sweet ones?

                        Here's the Eggplant recipe, I guess someone named tara gave it to me because it's called, Tara's Eggplant Spread!

                        2 large eggplants - peeled and cubed
                        1 large garlic - sliced paper thin
                        1 can crushed tomatos (no sugar added, of course)
                        salt & pepper

                        Slice garlic paper thin. Sautee in a little oil for a few minutes. Mix with eggplant and tomatos. Put into a small casserole dish and bake at 350 for a long time till done. Honest, that's what the recipe says!

                            Here's another with Artichoke

                            1 8.5 oz jar hearts in water, drained
                            1 6 oz jar marinated artichokes, drained
                            1 4 oz can diced green chili's
                            6 TB mayonnaise
                            1 1/2 cups grated cheddar, or cheese of choice

                            Chop the artichoke hearts, add chili's, mayo and 1 cup of cheese. Put in greased glass casserole dish. Top with rest of cheese. Bake at 350 till golden and bubbly. Normally, I'd dip with chips or something, but actually this would be great with artichoke leaves dipped in it!

                                ??! Cooked rutabaga?? Can I ask how you make it? My mom's boiled rutabaga has always had a bitter taste to it. It's never appealed to me.
