    Hi good friends,

    SHerri...what a menu, I am there. LOL

    I am finishing up the last of my shoppping (for thanksgiving) today. The pies were delish....yes I ate two last night and one this morning. They were very small and only had 1/2 cup of pumpkin in them. We can have 1 cup of pumpkin, Right? Hmmm...I'll check my book tonight. I am baking two cakes for Wednesday. One for my school and one for my son's class. I'm going to search for Thanksgiving decorations for the cake today.

      Pumpkin Bars with Maple Cream cheese Frosting





      Mix:
      1 cup almond flour
      1 teaspoon cinnamon
      ½ teaspoon ground cloves

      ½ teaspoon ginger
      ¼ teaspoon salt
      ½ teaspoon baking powder
      ½ teaspoon baking soda
      24 packets Splenda (16 tablespoons) (or ½ cup DaVinci SF syrup and 6 packets Splenda)

      Then mix:
      1 cup mashed pumpkin
      2 eggs
      ½ cup oil

      Mix dry into wet and pour into sprayed 9x13 inch pan. Bake 350 for 30-40 min. Let cool then frost. Really good next day!!! If they last that long!!!

      Cream Cheese Walnut Frosting

      4 oz softened cream cheese
      2 tablespoons softened butter
      2 tablespoons cream
      1 teaspoon maple or walnut extract
      1 teaspoon vanilla extract (or 2 teaspoons vanilla)
      6 packets Splenda OR SF vanilla syrup to desired taste and consistency.
      3 tablespoons chopped walnuts

      Mix all together till smooth then add 3 tablespoons chopped walnuts and spread on bars!

      18 bars at roughly 3.5 carbs each and 2.5 if you use the DaVinci and Splenda.

      Just one word: DELISH!!

            DOTTIE'S PUMPKIN POUND CAKE
            1 cup canned pumpkin
            1 cup granulated Splenda or equivalent liquid Splenda
            1 teaspoon baking powder
            1 teaspoon vanilla
            1/2 teaspoon pumpkin pie spice or 1 teaspoon cinnamon
            Pinch to 1/8 teaspoon salt
            5 eggs
            6 ounces almond flour, about 1 1/2 cups

            Grease an 8x4" loaf pan well or line with foil and grease foil. In medium bowl, beat pumpkin, Splenda, baking powder, vanilla, spice and salt, if using, with electric mixer until well blended. Beat in eggs, then almonds. Add a little water, if needed, to make a thick, but pourable batter (I didn't need it). Pour into pan and bake at 300º 60-75 minutes, until cake pulls away from sides of pan a bit and toothpick comes out clean. Mine took about 65 minutes. The toothpick came out clean at 60 minutes, but it needed to brown a little more. This comes out so moist that the extra baking time will be ok. Let cool in pan on a rack for 10 minutes. Remove from pan and peel off foil; cool completely on rack before slicing. Store in refrigerator or freeze.

            Makes 1 loaf or 12 servings
            Can be frozen

            With granular Splenda:
            Per Serving: 130 Calories; 9g Fat; 6g Protein; 7g Carbohydrate; 2g Dietary Fiber; 5g Net Carbs

            With liquid Splenda:
            Per Serving: 122 Calories; 9g Fat; 6g Protein; 5g Carbohydrate; 2g Dietary Fiber; 3g Net Carbs




            MINI PUMPKIN POUND CAKES
            Bake in 8 mini loaf pans at 300º for about 55 minutes. Remove from pans and cool. Makes 8 mini loaves or 16 servings

            With granular Splenda:
            Per Serving: 97 Calories; 7g Fat; 4g Protein; 5g Carbohydrate; 2g Dietary Fiber; 3g Net Carbs

            With liquid Splenda:
            Per Serving: 91 Calories; 7g Fat; 4g Protein; 4g Carbohydrate; 2g Dietary Fiber; 2g Net Carbs


            This is excellent and has a very nice, moist texture. It's also very sturdy and stands up well to spreading with butter. I think it could use a pinch of salt, but if you're going to spread it with salted butter, don't bother. To divide it evenly into 12 slices, I suggest first scoring it with a knife in the center, then score each half in half, then each quarter into 3 slices. Start slicing from one end to the other, following your score marks. You'll get fairly thick slices and you might even be able to get 16 if your knife is good and sharp. I used a serrated bread knife.

              JODY'S PUMPKIN BAKE
              8 ounces cream cheese, softened
              5 eggs
              1/2 cup granular Splenda or equivalent liquid Splenda
              15 ounce can pumpkin
              1 1/2 teaspoons Pumpkin Pie Spice
              1 teaspoon cinnamon

              Put the cream cheese in a medium mixing bowl and beat with an electric mixer until smooth. Add the remaining ingredients and beat well. Pour into a 6x8" greased glass baking dish. Bake at 350º about 40 minutes or until the center feels firm and a knife inserted in the center comes out relatively clean. Cool, then chill before serving.

              Makes 4-6 servings

              With granular Splenda:
              Per 1/4 Recipe: 342 Calories; 27g Fat; 14g Protein; 14g Carbohydrate; 5g Dietary Fiber; 9g Net Carbs
              Per 1/6 Recipe: 228 Calories; 18g Fat; 9g Protein; 9g Carbohydrate; 3g Dietary Fiber; 6g Net Carbs


              With liquid Splenda:
              Per 1/4 Recipe: 330 Calories; 27g Fat; 14g Protein; 11g Carbohydrate; 5g Dietary Fiber; 6g Net Carbs
              Per 1/6 Recipe: 220 Calories; 18g Fat; 9g Protein; 7g Carbohydrate; 3g Dietary Fiber; 4g Net Carbs



              Jody said she gets four large servings out of this but I thought I'd save a few carbs and serve smaller pieces. This is very good and I think the spices and sweetness are just right. I tasted it while still warm and it was nice like that but it made the whipped cream melt. After trying it, I think that making this into just four servings is a bit over the top. Six servings is more realistic. I will probably make this again for Thanksgiving instead of a pumpkin pie although this tastes pretty much like pumpkin pie. Despite the cream cheese it is nothing like a cheesecake.

                Thank you Cat! I've got it written down and will be preparing this too.Your a doll for posting it for me. Today I stayed on track once more. Day 6 of keeping on track.Breakfast was a sausage patty and 2 fried eggs w/ decaf coffee and cream. Lunch- I munched on some roast beef. Dinner- I made 3 cheddar cheese tostada shells and had tostadas while the family had soft tacos. Wishing everyone a great evening TTYL.

                  Where you live sounds like pure Heaven! I am a photographer and if I got near Crater Lake, I would have to have 2 gig memory card for my camera and a bigger hard drive to store the pictures. That "hearing a pin drop" sounds wonderful. Too noisy everywhere, here. I still like to tent camp out in the woods away from civilization.

                  I was at church for six hours today, and was very tired when I came home. I read this post and then I lay down on my bed and drifted off to sleep visualizing your description of where you live. It was wonderful. As you can tell, I love the mountains!

                    Ahh Sunny, am I bad! I was thinking Foothills of the Blue Ridge Mountains and wrote Smokey Mountains, DAH! It sounded much better when you said it . Yes, lots of mountain lakes here where I live and so much to see. We have the mountains here and the ocean just a few hours away. So we have the best of both worlds. My daughter is named Sierra after the mountains and her middle name is Pearl after her Grandmother. She is a true mountain girl who enjoys the outdoors very much. She regularly thanks her father and I for bringing her up in such a beautiful place. She hates going to the city with us. She'd rather stay home in the mountains where it's quite with all the fresh air. She says town stinks and she's right it literally does. Glad you enjoyed your nap. I would love to send you some postcards of our lovely area if you wish. TTYL

                      Where's lunch??? Otherwise, your day looks good. You don't like salad veggies? I remember you saying you had allergies. I'm just allergic to wheat and other grains, and intolerant of most dairy.

                      I wish I liked pumpkin. I never liked pumpkin pie, so I never learned to eat it. I'm going to try making it with just some butter and maybe cream. I'm wanting it to taste like sweet potatoes, which I like if they are not candied. Don't like 'sweet' much, especially sweet veggies. I tried buying a whole small pie pumpkin last year--peeled and cut it in cubes, brushed it with melted butter and roasted it in the oven--YUCK! It tasted bitter! The only way I ever eat it is in those pumpkin bars.

                      I did well today at the church pot luck, but I think I managed to get some sugar. I mostly ate turkey and ham, but, living in the South, most green beans have sugar--mine tasted a little sweet. The salad I got had carrots, but I picked them out, but the dressing tasted a little sweet, too. I was going to make deviled eggs, but didn't finish the two kinds of pumpkin bars until 11:30 p.m. I was too tired. I am far from fully recovered from my surgery, and I knew I would be up early and at church for most of the day. I am in the choir and we had to practice before church and put on quite a large musical production. There were about 600 people there.

                      About those pumpkin bars. I did eat too many of them. I ate two for breakfast, then I cut them into squares, put them on a cookie sheet and froze them. Problem is, I like them better frozen, so when I was putting them in a Zip Lock bag after I got home from church, I kept eating them. Then I fell asleep (dreaming about Sherri's beautiful woods) and wasn't hungry when I awoke at dinner time. I just ate a leftover grilled burger and let it go at that.

                      This is from Linda's website (www.genaw.com/lowcarb). Gets me in trouble every time I go there! I just copied several recipes! I miss bread at Thanksgiving and the stuffing. I made stuffing with an altered version of flax bread last year, but it didn't quite do the trick. I'm going to make a couple of her bread recipes using almond flour to see if that would be more bread-like.

                      I got a fresh turkey today with nothing at all injected. I bought two turkey breasts on sale at Kroger's recently, and reading the lable when I got ready to cook the first one, I saw that it was injected with 15% solution of 'all natural' ingredients. When I looked at the ingredient list, sugar was the first thing on there--even before water. Who puts sugar in turkey????

                      I can't believe it's 10:00 p.m. already! It seems I never catch up!

                        That's what I like so much about Virginia--I live surrounded by mountains, but I can get in my car and be ocean front Virginia Beach in three hours. I moved to the Florida Keys for a horrible two years, and though I love the ocean, I missed my mountains.

                          WOW. I grew up in the city. San Francisco. I would see places like yours...wide open space and wonder how people could survive so far apart from one another. Now that I am older....I'm glad I no longer live in the big city (live in a smaller less conjested city). I went to downtown Berkeley last week...and if you don't know, its extremely crowded, dirty and smelly. Yuck!!

                          All of the recipes sound and look delish. We have no excuses....I won't cheat! I won't cheat! I won't cheat! I won't cheat! I won't cheat! I won't cheat! I won't cheat!

                                LOL!! I decided to move. I've been on the nut rung for 2 weeks with no stalls. I had to skip rung 4 (allergies) and I don't drink so I had to skip rung 5. I only changed it this morning after I had posted this. I'm over here LMAO!!
