    Hey everyone. Just checking in. I promise I'll write more tomorrow (hopefully). I'm so tired...must be one of the 3 meds the doc gave me. I feel better though and had homemade vegetable soup tonight. It tasted so good. I'll never take advantage of eating ever again!!

    If for some reason I'm not able to get on here tomorrow....have a very happy Thanksgiving everyone!

        To: Catria, Marty, Sunny, Sherri....Today I am very thankful for our friendship. You guys have been so supportive. Thank you!!

        What would a 4-year-old want???

        Sunny four years old boys love cars and trucks. Hot wheels last for ever. My son still has hotwheels from when he was four (he collects them now). The CARS movie is also very poular with young boys...so any of those characers. My younger cousins get a kick out of those cars that play music and bounce up and down. Saw those at walmart.

                Hello my Derby buddies!! I'm so happy to see you all sticking to it!! I stayed on plan today but wanted the stuffing so badly!! Once I ate my legal food I was fine. I did make the Pumpkin Bake. I had a small slice. It was good but I wanted a thicker texture. I made the cheesecake (with the unflavored gelatin). I haven't tried it yet....not hungry after my one plate of food (a first in forever at Thanksgiving). It does make it a little easier that it was at my house. My aunt came to eat with us.

                I'm thankful to have each of you in my life.

Marty, I hope your Thanksgiving turned out nice hon. What's everyone up to today? Hope everyone is doing great! I'm putting a speghetti squash in the oven and will be having that with leftovers. I'm craving a nice green salad tonite. I'll be having vegies with a side of turkey! TTYL

                    Thanks! As always, the leftovers was better than the fresh. I'm always so whipped by the time I finish cooking, I really don't want to eat. Usually it has to do with a lot of tasting, but I broke that habit long ago. I only had two boiled eggs for breakfast, so I should have been hungry. I was still too full at dinner so I just had a few bites. I haven't been really hungry today, so I have eaten light again. The warmed up stuffing was even better today.

                    For dinner, I had a really good sandwich of turkey, swiss, and greenleaf lettuce with mayo on the artisan bread that I baked! I have always liked my turkey better cold on a sandwich. That's the first turkey sandwich I have had in at least three years. The bread is a bit heavy and very filling. I am able to slice it very thin, but it still holds up. I'm gonna have to be careful that I don't let myself eat too much of this bread. Bread has always been my downfall.

                    Today, I got some chores done that I have been putting off, but mostly I've been experimenting with making low carb food. I came up with a very interesting cracker today. It was a little bit fragile, but tasty and very low carb. I'll have to fiddle with it a little bit more next week. I'm going to try to come up with some holiday type foods for Christmas & New Years. I'm going to work on appetizer/party type foods first. I'm going to write that cook book yet!

                    I wish a bunch of us lived close together! Then we could experiment with cooking, and have taste testing get-togethers. I will have to freeze most of the food I made yesterday, 'cause all my big family are skinny and almost of my friends are, too! When my super-skinny sister that can't cook was here to take care of me after surgery, she ate as much of my Atkins food, that I cooked up ahead, as I did! She loved it all! She-that-hates-to-cook asked me to send her the recipes by e-mail (my printer was out of ink). She's already made the Hearty Breakfast Casserole and the Salmon Muffins. It's a miracle! Her stove still works!

                    Well, better go do some form of exercise. I still have to lift weights and ride my recumbent stepper. It's only five days until I'm officially allowed to exercise!

                      Sherri--can you tell me a little about the pumpkin pound cake?? What was the texture like??? Was it heavy and dense like most of the stuff made with almond flour??? I am thinking about using that recipe to make a pumpkin roll and make cream cheese/whipped cream filling for the inside. When we had our Sunday School dinner, a woman brought a high carb regular pumpkin roll and it was the hit of the night. I thought it might be interesting to come up with a low carb one. While it was still hot, I would need to be able to roll it up inside a towel without it breaking apart. I might try to come up with a pumpkin sponge cake.

                        Hey ladies.....I did well for Thanksgiving. I did have a tablespoon full of dressing. I had to make sure it was good. I ate all of my food and desserts. I will probably experiment more for xmas.

                          Hey Sunny! I wanted to try that bread. I did go to the health food store today and was so disappointed. They don't carry the almond flour (discontinued it 3 months ago). That upsets me so bad. I did get some almond extract, natural peanut butter, and some almond milk (1 carb per 8 oz.). I guess I will have to grind some almonds but I just am not proficient in the kitchen. Don't get me wrong..I can make what I want to eat but I'm not a gourmet chef so you'd really not want me around to help cook (I could taste though). LOL!! My grandmother and Mom always kicked me out of the kitchen. I was never allowed to do anything (house-wise) so when I got to college I didn't even know how to wash clothes. I had never ironed or anything like that. My best friend was the same way. We were a hot mess together. We're lucky our clothes came out wearable after our first attempt to wash.


                          Can you tell me how you made the dressing (stuffing)? I want some so bad but I refuse to cheat. Give me legal recipes!!

                            Bummer on not finding the almond flour! I hear you on not learning to cook at home. I'm the youngest of 10 living kids, raised on a farm. My mom was always too busy cooking and feeding us to teach me how to cook. I did learn other stuff, though! When I was 16, I took Home Economics and learned how to cook and do many other things. I'm very glad I did. My mom was an awesome cook, but she never had to use recipes--it was all a handful of this, a pinch of that and it turned out delicious every time.

                            I made the bread by the recipe I posted; then took a small part of the dough (there's just one of me to feed) and added extra garlic & onion powder, a little ground sage, some paprika & parsley flakes. I baked it separate from the rest of the dough. After it cooled, I cut some of it in cubes and crumbled some of it. I spread it out on a pan, placed it in the oven set on low heat so it would dry, like store-bought stuffing mix.

                            This I have been doing for a long time, so I had a lot of turkey stock/broth on hand. I cook a lot of turkey and chicken, so I save all broth & pan drippings in canning jars in the freezer. Each time I cook another neck and giblets, I use a jar of the broth instead of water, and you end up with a very rich stock. This is what I used to moisten the stuffing. I put some of the stock in a pan ( not much, as these cubes don't absorb liquid as well as regular bread cubes) with a chunk of butter, added 1/2 small can of mushrooms slices and pieces. I added to this the exact same spices that I listed above. How much depends on how big a dish of stuffing you are making--remember mine was small. I chopped half of the giblets and added those and put in the meat pulled off the neck. I added chopped celery and onion; then, after simmering all this in the liquid for a bit, pour it all over the bread cubes and mix it all together and put it in a baking dish sprayed with Pam. I baked it for about 20 minutes at 375°F until the top was brown. All the added meat and veggies cuts down on the 'other' carbs and high calorie count from the bread cubes.

                            Hope this works for you, and remember you do have Mom there to help! She'd probably love to help and give advice! Moms always like to be needed.

                              Hi Sunny, yes the pumpkin pound cake is heavy and dense. My daughter even commented on how moist it is and taste alot like the pumpkin pie. Although it was airy and it held up to being sliced and put into the toaster for a warm up. I beleive if it were spread out on a jelly pan and then baked, it may be possible to be able to roll it up after coming out of the oven still warm. Great Idea! I think I'll play with that myself. It may also help if one added some soy flour to the mix. I have found that soy flour makes the texture more airy and spongy (sp) when added. It may be the texture you're looking for.

                                I'm going to play around with beating my egg whites and yolks like you do for a sponge cake to see if that will help. I'm not going to do it until next week, 'cause I'm about cooked out. I'm starting to have too much food that I don't want to eat lying around. Even though I have a small upright freezer, I've got it stuffed to the gills now. I might have to start my own local chapter of the Atkins Diet to have people to feed all this stuff to! At least a few of my very large family (by head count, not body size) could be overweight! I'm starting to think about creating Christmas and Valentine's Day recipes!
