OMG Cat! Those look sinful! What's the recipe called on lindas sight? I'm interested. I'm so happy to hear you're off work untill next year. You can focus on you and Toshiana. I feel the same way about my DD as you do yours. Sierra is my angle girl. Can you believe that I still have her believing in Santa at thirteen! I know she has a feeling about it all. But the fantacy to her is still alive. This will be my last year of that magic in the air though, I believe anyway. She's so spoiled! I wouldn't have it any other way! They're only young once, so why not! I'm so proud of you Cat! You're a good mom and do so much for others. Just your kindness alone is everything! You're awesome people and I'm happy to be your friend! TTYL!

Okay, guys! where is everybody???? I have had to spend most of the day in bed to make up for way overdoing it for several days running. At least, I still don't feel like eating! That's always a plus!

Kass: I have a question about the lemon cheesecake recipe. Why do you heat the cream cheese, but then let the jello cool off before mixing the two???

With my tummy not acting right, I can't get excited about Christmas dinner food at all. Can't even think of anything I want to try. Christmas when the kids were home was a big breakfast with the works and not that big of a deal for the rest of the day. I usually baked a ham, potato salad, deviled eggs, fruit salad and rolls and everyone just ate as they had time. That day is so hectic.

I am thinking about our traditional New Year's Eve and Day menu and I'll be able to keep most of those foods. We always had shrimp on New Year's Eve and pork and collard greens on New Year's Day. I love all kinds of beans, but can't stand black-eyed peas. Good thing!

      Good night!

      Sunny!

Hey Sherri! The recipe can be found at http://www.genaw.com/lowcarb/peanut_butter_fudge.html. Yes, my baby girl is very spoiled. It's less than 5 days until Christmas and what do I do today? Buy her another toy because she wanted it. Why do I have no restraint? I can't wait until you upload some photos so we can finally see you and your family. It's funny that you think I'm kind. I'm like one of the most disliked people at my job (because of what I do). It's made me develop a tough exterior. I'm happy to be your friend as well.

Hey Sunny!! I'm so sorry that you're not feeling well. I'm sending healing angels your way to fight off those ill spirits. I've had a rough day (2 doctors appointments - one for my Mom and one for my brother) both in another city with too many cars!!! I'm so tense from driving in that traffic. I so like my small town. Plus it started raining hard on the way home and it was dark (bad combination). I'm just so grateful to be home (safe). Get well soon!

              Hi Sun Sun
It's hard to mix the splenda in w/the cream cheese when it is cold. I let it cool off before mixing it, because it seems to set faster. The first time it took about 3 1/2 hours....now it only takes about 2.

                Hey friends,

I finally finished my classes. It feels so good. No more stress until Feb.

                Hope all is well ladies,
Cat...You are kind. It's hard to have a job that makes people dislike you. But yoy always come here in good spirit. I love spoiling my son too. I over bought this year. It's so hard not to do it when you can. I like your idea about not connecting food with celebrating.

Sherri...I'm sure she will believe in Santa as long as you want her too. It's funny how we think we take spend so much time taking care of our children....but don't realize how much care they take of us.

                Sweets...where are you girl?

Hey smokin grannie (MARTY) where u at?

Sunny....were u able to reschedule your holiday engagements that you've missed?

Hey! It's not your job to spoil her! That's your mom's job! You are supposed to hang tough and grandma gets to be the softie. I know I would spoil her, too. I always head straight for her picture first thing when I see your post, because looking at her smile boosts my spirit.

You are kind! You might have a tough exterior when you need to, but you are soft and sweet where it counts. I was kinda surprised to read that you are learning to love yourself. People that don't love themselves are not usually my kind of people, but you have been my kind of people since I read your first post. Have you ever heard the quote: "Be as nice as you can be and as un-nice as you need to be."?

Have a great Christmas and wind down and de-stress! That's an order!

Nope! They went ahead with the musical, only at a later service. They had the kids program, too. I so wanted to see that. I did get to go to the all-church Christmas party on Wednesday, and saw my preacher in tights! He, the youth pastor and a deacon did a skit of Ratatouille dressed as rats. It was hilarious and at the end, they did a Rocketts style "we wish you a merry Christmas" and me without my camera! I still will never let him live it down.

I thought the same thing about my daughter when she was 12, but turns out she was protecting 'me' from the shock of finding out! It's a long story, but I have to tell it.

My son is/was 5 years older than my daughter. When he was in the 2nd grade, he came home acting like he knew Santa was not real. I knew he was friends with some older boys that told him stuff that he didn't need to know. He kept asking loaded questions, implying that he was too old to believe in Santa, so I told him the truth. This was a kid that NEVER cried. He burst out crying and said he didn't believe the boys and wanted me to convince him that he was real. He went running to his room yelling, "Next, you'll tell me the Easter Bunny and the Tooth Fairy are not real!!!" What was I supposed to say then? I explained it all to him, but had one real unhappy kid that Christmas.

Sooo...I decided I would never tell Paula, my daughter. Wherever she heard it, it wasn't coming from me. Fast forward to the year she was 12 (she was several grades ahead and already in high school). She had a friend over spending the night and they were looking at stockings and the friend said something about there not being a Santa and Paula shushed her loudly and said, "Don't talk so loud, my mom still believes! Don't ruin it for her!" I about died laughing and told her the Jamie story. She said she had known since she was 5 and in the 2nd. grade!

Ahhhh...fond memories! Kids are just the best! I love 'em all!

                      Sunny!

Hey Sunny! You are so sweet. Yes, it's true. I'd never loved myself. I wasn't really allowed too. I had a traumatic childhood. I think that is why I overdo it with my daughter. I don't ever want her to feel any of the pain I felt growing up. Everything I've accomplished in the last few years has been so she can have a good life. I do, at times, feel like I've failed her with being divorced from her father. But I realize I am human and it takes 2 to make a thing go right and he just definitely was a scrub that didn't want to do right. I think her self-confidence and love for herself will be so much greater with him out of the picture. Now, we're praying for a "new, Christian" Daddy. I require 3 things: kindness, honesty, and loyalty. She so wants a sibling but right now that can't happen (have not dated in over 3.5 years). It will happen when God wants to happen so I'm not looking. If someone is meant to be with me then God will bring him to me.

Hey Kass!! What's on the menu at your house for Christmas? I bet you are so relieved that classes are over. I can just hear your sigh of relief. Did you say you worked with disadvantaged children? I've been on my job for almost 9 years. I've worked other places in between. I left this job for a year (needed a sanity break). I'm glad to be gone from there at this moment. I really am at a point where I don't know if that's where I want to be anymore. The negativity starts to wear you down. I needed this break.

Hey Marty, Sherri, and Sweets!! Where you at? Again, I pull out the BIG GUNS!!

I bought an exercise mat today and a Pilates video that breaks the segments into 10 minutes each. I plan to start on my bike 5 minutes per day and do a 10 minute workout. I am going to try to do the flexibility/stretching part of the workout in the AM before I go to work so that I won't stiffen up during the day. Sunny has served as a true inspiration for me.

You guys are the greatest and mean a lot to me.

I am keeping it really simple. I so want to loose this weight before my Bday in June.Hopefully I will have this last 30lbs off by April. So I am going to make a roast and green beans and other low carb foods. I will make my dh some yams...but that is it. The real challenge will be at my mom's house. So much food....its ridiculous. I will need all the will power I can muster up.

I am a special ed teacher (high school).

I can only imagine how the negativity feels. I am blessed to work with a really good group of teachers and therapists. We have so much fun and rely on one another for support.

I know that baked and broiled foods are good for us....however, I am sick of baked chicken. I wanted a little fried food. Here is what I made:

                            Chicken Nuggets
                            cut up chicken breast
                            scrunch up pork rinds
                            1 egg
I dipped the chicken in egg then the pork rinds and fried the.....here's what I got.

Then tonight I had some fried chicken

Just season it up and fry it....Use a nonstick pan

                            It was actually pretty crispy.

                              cut up chicken breast
                              scrunch up pork rinds
                              1 egg
I dipped the chicken in egg then the pork rinds and fried the.....here's what I got.

Then tonight I had some fried chicken

Just season it up and fry it....Use a nonstick pan

                              It was actually pretty crispy.
Looks yummy!! Did it hit the spot?
