Tonight I'm having this because I made some tarragon vinegar over the weekend: Chicken with Tarragon Vinegar Sauce Recipe at Epicurious.com

and I haven't decided on the veggie yet.

So did people stop eating dinner?

Today I unexpectedly had to stay until late at the office, so I prepared my dinner here. Good thing I always have 'legal' food with me. I made a salad with lettuce, microwaved radishes (because they taste less bitter than raw), boiled egg, green olives, olive oil, lemon juice, basil and rosemary (lately I've been adding rosemary to everything ).

Oh, did I say how unhealthy Atkins is?

And I'd like to see others post pictures too.

Re: What's for Induction Dinner Tonight????

I found this recipe in the recipe section and decided to try it. It was fantatic and hubby had 2 pieces. I served it with a salad. I made a couple of changes but added the nutritional factors for both. I would be lost without my Accuchef program to put these recipes in to get the nutritional factors

I hope Maria Russo did not mind my changes...

                Bacon Cheeseburger Quiche

                by maria russo
                Ingredients:
                1 lb. very lean hamburger
                1 small chopped onion
4 slices crisp-cooked bacon, chopped in bits
                3 eggs
                1/2 cup mayonnaise
                1/2 cup half-n-half
8 oz. shredded chedder or swiss cheese
                garlic powder to taste (optional)
                white pepper

Brown hamburger in skillet with onion. Remove and mix in bowl with
bacon pieces, breaking up any larger clumps with a fork or pastry mixer
until you have a fine mix. Drain well of any excess grease and press into the bottom of a deep-dish pie pan. Set aside.

                Preheat oven to 350°F.

Combine remaining ingredients in mixer bowl and whip well. Pour
mixture over beef "crust" and bake 40-45 minutes until top is browned and
                "set".
Cool 15- 20 minutes before slicing. This can be packaged in Ziplocs or
plastic containers for meals quickly microwaved over the next 3-5 days. (Does not freeze well, though.

NOTE: I didn't add the onions until after the hamburger and bacon where in the pan. I then browned 1/4 cup of onions and about 1/4 cup of mushroom slices in butter then layered it onto the hamburger bacon mixture then added the liquid on top of that.I baked this in a 8X9 pan and cut it into 9 pieces.

I'd forgotten how good homemade Taco Salad was until my step kiddo was visiting and specifically asked me to make it. He thought it would be rocket science, but I think we will make a cook out of him yet!

Ground beef with some chili spice and onions and tomatoes ... on top of a bed of romaine with diced onions and tomatoes, sour cream and shredded cheddar cheese. Refreshing and yummy.

Tonite I made a layered seafood stirfry casserole. It had talapia, prawns, brocolli, green beans, onion and water chestnuts. Everyone else had a bed of brown rice uner it, not me. I had a side green salad from lettuce out of my garden. I also made a cucumber and onion salad marinated in water, vinegar and stevia.

Well I just can't seem to get overly hungry today...A lot of that has to do with the heat. I sure don't have the calories in today. My total net carb count today is only 9 so far. I Had a steak for supper with 2.5 oz of turnip.I had 3 pieces of celery for a snack earlier...so most of that 8 carbs are from veg. I did get my 10900 steps in today.
I made some popsycles last night from a wee bit of crystal light..I think they could of had another 1/8 of a tsp..the one I had tasted like a little flavored ice..Oh well better than the real thing

Great thread idea, I love it!

I made some burgers.. just took ground beef, 1 egg, chopped onions, minced garlic, some italian seasoning (no sugar of course), and finely ground pork rinds and mied it all together. They were SO yummy, I couldnt even believe it. Like little meatloaf patties! lol Then I took a little shreded cheese and sauteed mustrooms and put that on top. I had green beans and then took cucumers and put them in Italian dressing (again, no sugar., and so yummy)

It was such a delicious dinner and I have leftovers. Gotta love them!!
