Made a Reuben casserole tonight ... the carb eaters had bread mixed in theirs ... I chose the no bread version. Also had diced tomatoes, cukes and ranch dressing for salad.

Alas, no dashes, dots or s(p)lashes of wine are allowed during Induction.

That's it! I'm going to the Organic Market down US 1 and getting me some of those veggies so I can copy these recipes.

Wait a second, Not2late, if your are on premaintenance, why are you posting here?

Anyway, for dinner I have had, so far, 4.5 oz cube steak, "fried" in 1 teaspoon of butter. Seasoned with Cajun spices, CLA, 2 Fish oil capsules and a partridge in a pear tree.

I'm sure I'll eat one more time tonight.

Veal parmesan & Italian green beans

The veal parm was braised in a tomato reduction made from fresh picked tomatoes, a little garlic and oregano cooked in olive oil with a pat of butter. I used veal leg slices which are much cheaper than cutlets and work better for this kind of cooking method. When tender, add some mozzarella and parmesan cheese on top, cover and cook until melted. Very yummy and veal parm-y without the breading!
