    Hope I don't burst anyone's bubble here (including mine ), but I think the vanilla makes this non-induction friendly, right? Fitday's stats for vanilla extract seem way off for me, but I would think there are carbs in it (corn syrup?) Any experts have any ideas on this?

      vanilla, like cocoa, is legal in 'spice' amounts.

      Some extracts do contain sugar, but you use such a small amount of extract, and the sugar is a small percentage of that, that it is bascially negligible.

        Gotcha - thanks. Some deeper digging showed 1g carb for 1 tsp, so not too bad. I was worried that the taste was primarily due to sweetening. I guess it's the alcohol. Anyway, 1tsp or less per day should be OK by me...(phew)...

          So it doesn't have to be instant coffee... it can be just the regular kind? This variation sounds really, really good. I miss frappucino!

                i used instant coffee to tell you the truth I dont know if you can use anything else.

                    Mitzi, why not freeze your leftover coffee or decaf in ice cube trays? then use them in your shake.

                      My bottle says basically the same thing... it doesn't really breakdown the number the carbs. However, as shown above, there is no sugar in the ingredients.

                      On my regular vanilla extract, the ingredients are: A blend of water, alcohol (35% V/V), vanilla bean extractives, and sugar. It doesn't breakdown the carb count, either. But I do like the idea of the sugar-free extract, and the fact that it is organic. I don't do everything organic, by a long shot, but I like doing it when I can.

                      Thanks for the clarification on the coffee! I'm not a real cook by any stretch of the imagination, but I did used to bake a lot, and remember using instant coffee in cakes. I think I have some in my pantry, so I will definitely give it a try.

                      And what an interesting idea about the ice cubes! I'm going to try that, too.

                      Eggs - I've got to admit, that I'm still coming to terms with the thought of drinking eggs. LOL... I may just go ahead and get some eggbeaters (the whole egg kind, not the whites)... for some reason, the thought of those skeeves me out a little less.

                      You know, as long as I've been a member of this board, I haven't spent a lot of time in this forum. I need to come here more often! I appreciate everyone's replies.

                        I may just go ahead and get some eggbeaters (the whole egg kind, not the whites)
                        I thought of that, too. But I wasn't able to find any pasteurized products which had the normal amount of fats in them. The ones I saw were all 0g fat.

                          You could also whip your egg whites as in traditional egg nog and gently blend with the beaten egg yolks and cream. You could also add some fresh grated nutmeg to the top, or also a dash of rum flavoring, or a dash of davinci sugar free flavored (vanilla) syrup instead of splenda! Does this keep you from being hungry same as cooking the eggs? Sounds great!

                            OMG I had to register on this board purely because of this recipe.

                            Initial reaction was ewww but after read a few pages I had to give it a go.

                            Result - absolutely mind blowingly good. The hidden gem of the atkins diet. Pure genius.

                                I have my onw hens in my backyard so I do not worry about fresh. I take them warm from the coop and make my omelets every morning but I will try that eggnog sounds great maybe a touch of cocoa powder?
