I think I went over my allotment with it a bit. I was striving for a solid shell. By gummy, I about had one! *snicker!*

I misread the brocolli slaw recipe and didn't see that I needed two bags of the stuff. Fortunately, I had bought some brocolli anyway. So that went into the salad. Waterchestnuts are induction-safe (although made in CHINA...grrr!) so they went in. Eventually, I'll be able to add sunflower seeds and hopefully, some wonderful day, raisins, too. In any case, it's a lot like my carb-loaded brocolli salad. I could live on this stuff forever! SO good!

*Do you think that the food pyramid will change? When do you think that will happen?

Honestly, I don't think it will change for a very long time, if it ever does. To many people are skeptical of the lo carb life, and as long as the Government knows this, they can keep up the game.
*Do you think that Atkins or Atkins principles will gain a place in the "normal" everyday diet?

I don't think it will for everyone. Maybe for overweight people, or children that are born with overweight issues. What about those who can eat anything they want and not gain a pound? Like my brother, he is a perfect image of health at 34 YO. He eats a ton of carbs and never gains a pound. But maybe he is slowly killing himself, I don't know.

*How do western countries (Canada, US, UK, etc.) compare with other countries in terms of obesity, diabetes, heart disease, and what are the typical diets of these countries? I have heard that the French have the lowest rate of heart disease and obesity, although they eat the highest-fat diets.

My Mom's family is from Germany, and they are all robust. They eat a ton of potatoes, bread and pastries, oh and don't forget all the beer they drink. I wonder if that is a sign??? When we sit for breakast, the table is full of bread, butter, sugar, eggs and Jellies. Scary.

It was kind of a combination of these two. I had intended to just use brocolli slaw but in the end used both the slaw and flowerettes.

http://www.genaw.com/lowcarb/broccoli_slaw.html Very plain jane - too plain jane, for that matter.

http://www.genaw.com/lowcarb/broccoli_salad.html has bacon, red onion and sunflower seeds..

The recipe here doesn't call for waterchestnuts. I add a can of sliced waterchestnuts; drain and chop them up and throw them in the salad. My original recipe also calls for a one cup of sunflower seeds and 1/2 to 1 cup of raisins. Needless to say, raisins aren't acceptable for some time and sunflower seeds are in the nut rung.

The salad is good right away but much, much better the second day. Everyone loves the original sugar-loaded version - I'm curious to see what they think of this low-carb version.
